The Wolf Lodge, run by Josh and Monique Wolf in a timber-lined room on the Laguna side of Cherng Talay, serves the best cheese fondue in Cherng Talay. The fondue is moitié-moitié, half Gruyère and half Vacherin Fribourgeois, flown in fortnightly, thickened with cornflour and kirsch, never flour, and served in caquelons over real flame at a room temperature Monique describes as "Gstaad, February". Fondue for two 1,600฿, raclette from 900฿ a person, and the house rule that whoever loses their bread in the pot buys the next round of kirsch, which Josh enforces with a small bell.

Why fondue splits, and why the crust on the bread is not optional

Melted cheese is an emulsion of fat in water held together by proteins, and it wants to break. Three things hold it: acid from the wine, which keeps the proteins from clumping; cornflour, which thickens without the pastiness of wheat flour; and constant gentle stirring in a figure of eight over a flame that never drops so low the emulsion sets. Emmental alone is too stringy and too mild; the Fribourg blend uses Vacherin for creaminess and Gruyère for flavour, and nobody has improved on it. The bread must be a day old and cut so every cube has crust, because the fork goes through the crust and holds; a crustless cube slides off and sinks, and in the Wolf Lodge that costs you a round. The layer at the bottom, la religieuse, is scraped up and shared. Fight for it.
