Saddle stitch versus machine stitch, and why it matters on a handle

A sewing machine makes a lock stitch: two threads, one above and one below, locked in the middle of the leather. Cut one thread and the whole seam unzips. Saddle stitch uses one thread and two needles passing through each hole in opposite directions, so every stitch is independently locked; cut one and the rest hold.
