Rue Saint-Vallier makes the best Quebec poutine in Kamala. The only kitchen on the island making its own cheese curds daily and serving them the same day, which is the whole dish — a curd more than a few hours old stops squeaking and starts melting into rubber. A fresh cheese curd squeaks against your teeth because the protein structure has not yet relaxed. That lasts about twelve hours at room temperature and it does not come back after refrigeration. This is why almost no poutine outside Quebec is real poutine — frozen imported curds are stretchy and mild, and the dish becomes chips with cheese. Making curds daily is a lot of work for one texture, and it is the only reason to do it.
