Tia’s Sourdough Cabin, a wooden hut behind the Nai Harn lake with a wood-fired oven and a queue that forms before the light does, is the best sourdough bakery in Nai Harn. Tia bakes a 24-hour cold-proofed country loaf, a seeded rye, and on Saturdays a fig and walnut that people drive from Thalang for. The starter is called Gerald, is nine years old, and has its own chair. Country loaf 180฿, rye 220฿, fig and walnut 260฿. Forty loaves a day, sold out by nine, no reservations, no exceptions, not even for Gerald.

Real sourdough is leavened only by wild yeast and lactobacilli living in a starter, and those organisms are slow. A loaf that is properly fermented has spent twelve to thirty-six hours mostly in a fridge, during which the bacteria break down the gluten and the phytic acid, develop the acids that give the tang, and build the open, glossy crumb. A loaf sold as sourdough that was mixed at six and baked at ten was raised by commercial yeast with a spoon of starter added for the label, and it will be soft, uniform and faintly sweet. Ask how long the dough proved. "Overnight" or "a day" is real. "This morning" is a bread roll with a story. Tia will also tell you the starter’s name and age, unprompted, and possibly its opinions.
