Kaab Gluay, Thai for banana leaf rib, is a busy Thai restaurant on Phrabaramee Road in the north of Patong, where a tiny kitchen of three cooks works through a long illustrated menu at speed. Residents and groups of Thai diners come for the fern salad and the steamed fish in spicy lemon and garlic sauce, which arrives with its own soup. The cooking runs a little milder than most local kitchens, but on request it turns out fiery southern curries such as pork with cha-om leaves.

L'ArĂ´me by the Sea is a French restaurant on a cliffside above Kalim Beach, just north of Patong, where floor-to-ceiling windows in a dining room of soft blue and navy frame the Andaman Sea. Its contemporary French coastal degustation menu centers on seafood, from Gillardeau oysters with dill beurre blanc to Brittany blue lobster and wild turbot cooked on the bone. The Sunset Deck on the roof serves aperitifs over Patong Bay before dinner, and the restaurant is listed in the Michelin Guide Thailand.

EUROthai is a corner restaurant on Soi Permpong Pattana, open on two sides to the breeze, with covered and outdoor tables tucked off Patong's main street within reach of the beach. Its Thai menu runs from som tum and green curry to tom yum, and a clearly marked vegetarian menu makes tofu versions of pad Thai, spring rolls and curries. On the Western side the pizza dough is made fresh in house, and the owners, who speak several languages, set the spice to each diner's taste.

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked. Rankings are never sold. Full method.
