Sam's Steaks and Grill is a silver service steakhouse inside the Holiday Inn Resort, an intimate room of light wood paneling, polished brass and beaded hanging lights, with the wine cellar open to view. The kitchen cooks Australian fillet and A5 full blood Wagyu ribeye, and the house signature is the Fillet Chef Chantaporn. Churrasco Phuket Steakhouse is a South American steakhouse opened in 2012 by two friends who had lived in South America for years and wanted to bring its grill cooking to the island. The kitchen works with imported Wagyu and Black Angus, and the Wagyu picanha, the Brazilian rump cap cut, comes with a homemade béarnaise. The dining room is large and cozy, the wine list is long, and the meat is halal.

At Smokestack, American pit master Christopher Tuthill smokes his meat low and slow, leaving the beef short rib to cook overnight before finishing it in fruit tree smoke. The 1.4 kilo Wagyu tomahawk is grilled over an open fire, finished in a charcoal oven and meant for sharing, with mac and cheese and the house slaw among the sides. It sits on the seafront at the Courtyard by Marriott in Patong, and if you mention a birthday or a honeymoon when you book, the staff add a cake or touches of their own.
