Blue Elephant, a Thai restaurant and cooking school led by Chef Nooror Somany Steppe, teaches inside the Phra Pitak Chinpracha Mansion, a century-old Sino-Portuguese governor's house. Morning students hand-pick ingredients at a local market, then cook 4 or 5 recipes at their own stations from a menu that changes every day of the week. Afternoon classes turn to traditional Thai desserts, lessons run in five languages including French and Dutch, and the meal is served in the restaurant, which the Michelin Guide has listed several years running.

Phuket Thai Cooking Academy has taught Thai cooking since 2015 in a kitchen beside a small lake, with jungle all around. Students build their own class from a list of about 16 dishes, choosing an appetizer, a soup or salad, a main and a dessert, and cook each at their own station. Morning classes begin with a walk through a local produce and seafood market.

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked. Rankings are never sold. Full method.
