Boonrat Dim Sum has been steaming breakfast in Phuket's old town since 1917, and the fourth generation of the family runs it now. The shrimp dumplings, fragrant and fresh, are recommended, as is the seaweed wrapped minced pork, with local tea on the side. Locals and visitors share tables early in the morning and they fill fast, so get there early.

Dim sum at Yue is handcrafted and wrapped when you order it, and an all-you-can-eat option lets you keep sending for more, which works well because the pieces are small. Chef Kenny Chang has cooked Cantonese food for more than 20 years, with dim sum specialist Lee Kuan Foo beside him, and the signatures away from dim sum are Peking duck and Sichuan lobster. The restaurant is on the second floor of the Courtyard by Marriott across from the Surin Circle clock tower, with rock and metal decor that recalls Phuket's tin mining days.

At Ketho you pick your dim sum yourself from the fridges, prawn dumplings and crab meat shu mai among the baskets, and hand the tray to the staff at the steamers with your table number. The kitchen also cooks bak kut teh, pork ribs in broth, and khao tom rice porridge for breakfast, and children get dim sum shaped like Angry Birds characters. Kathu locals come from early morning, and the baskets reach the table fast.
