Go La fries yellow Hokkien noodles over charcoal, and the Michelin Guide suggests ordering them with an extra egg, because the yolk makes them creamier. The family is in its third generation at the wok, and you hear the frying and smell the charcoal from your seat. The menu is in Thai with a few pictures, so have a translation app ready, and bring cash.
“Loved the smokiness of the wok in the dishes!”

Mee Ton Poe has fried Hokkien noodles at the clock tower roundabout since 1946, and its mee pad Hokkien is thick yellow noodles with pork and seafood in a brown gravy, with a soft egg on top. Most tables add a few pork satay skewers, and the shop next door serves the same noodles as a soup. Bring cash, because the shop does not take cards or bank transfers.
“As a Phuket local, Mee Ton Poe has been one of my favorite traditional restaurants since I was young.”

Mee Somjit is known for its Hokkien noodle soup, big yellow noodles in a light, tasty broth with shrimp, fish and dry wonton. Deep-fried wonton can be ordered on the side, and dessert is o aew, the local banana jelly with red beans over ice. The menu is in Thai, so point at what you want, and the lady who owns the old shop by the clock tower roundabout is glad to chat.
“Soup full of umami, loaded with crabmeat.”

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked, unless only one list exists. Rankings are never sold. Full method.
