The Pad Thai Shop is a family run noodle restaurant with brick walls, plastic chairs and a big yellow sign, and a plate of pad thai costs very little. Each table has pots of tamarind, crushed peanuts and chili sauces so you can season it the Thai way. Beside the pad thai, the kitchen makes a beef noodle soup with a rich slow cooked broth and tender beef.

Pad Thai Phanhin is a pad thai and fried oyster shop opened by two brothers, one of them a former luxury hotel employee, and they season their noodles boldly in the southern Thai style. One Chun is a Phuket restaurant in a Sino-Portuguese shophouse over a century old, cooking Peranakan recipes passed down from the owner's grandmother and aunt. The owner, Napapat Chessadawan, is a fashion designer and antiques collector, and she filled the rooms with 1950s furniture, black-and-white televisions, transistor radios and old clocks. Its moo hong is pork belly braised in soy and spices until it falls apart, and the Michelin Guide has awarded One Chun a Bib Gourmand seven years running.

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked. Rankings are never sold. Full method.
