Kan Eang @Pier is a seafood restaurant that opened in 1973 with six tables under a thatched roof, and its name, "do it yourself," comes from customers who carried their own plates. In the seafood pavilion diners choose their fish, prawns or lobster from the local fishermen's catch, then name the weight and how it should be cooked. The menu includes baked Phuket lobster in butter, and the outdoor tables sit in the sea breeze under trees a century old.

Bucha Gallery and Restaurant is a Southern Thai restaurant where Chef Wina cooks family recipes learned from her mother, who ran a market shop in Pak Phanang in Nakhon Si Thammarat. Her khao yum is a herbal rice salad that tastes a little different with each bite, and plates come dressed with edible flowers. The dining rooms double as a gallery of Buddhist sculpture, amulets and paintings, and owner Earl Dechsakda is glad to tell the story behind each piece.

Mor Mu Dong is a southern Thai seafood restaurant that Mor and his wife opened about 23 years ago on family land beside the Mu Dong canal, starting with two tables and food cooked to order. The menu includes pla tu yad sai, a deboned mackerel filled with curry paste and fried, and squid in lime, garlic and chili. The Michelin Guide gives it a Bib Gourmand, its award for good cooking at a fair price, and Andrew Zimmern featured it on Bizarre Foods.

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked. Rankings are never sold. Full method.
