Mom Tri's Kitchen is the restaurant of Villa Royale, once the private home of the architect Mom Luang Tridhosyuth Devakul, and its terraces hold his antiques and original artwork. The cellar of more than 750 labels, run by French wine director George Ciret, won the Wine Spectator Award of Excellence eight years running from 2004. Dinner calls for long trousers, and one dessert is deep fried coconut ice cream served in a grated coconut shell.

The Clubhouse is the restaurant of Kata Rocks, a resort of white villas styled after the lines of a superyacht on a headland above the Andaman Sea. Its tables run along the edge of the resort's infinity pool, which is lit once darkness falls. The kitchen cooks Mediterranean and Thai dishes with local seafood, the house makes its own gin, and a cellar of more than 300 labels sits below the dining room.

The Boathouse is a restaurant whose wine list has held the Wine Spectator Award of Excellence since 1995, and by 2005 no restaurant in Thailand had held it longer. The kitchen pairs Southern Thai cooking with international dishes, and the Thai dishes include Yam Som O, a pomelo salad with shrimp. There is a degustation menu with a wine from the cellar of more than 150 labels for each course, and a second-floor terrace looks over the beach.

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked. Rankings are never sold. Full method.
