Black Ginger, the Thai restaurant at The Slate, is reached on a wooden raft pulled across a lagoon lined with fan palms, toward a dark wood Thai house lit by flickering torches. The kitchen cooks Southern Thai and old Phuket recipes, and the tasting menu includes moo hong, the island's classic braised pork belly, alongside crab curry and lobster. The Michelin Guide has listed it every year since its first Phuket edition in 2019.

Sea Almond is a beach restaurant named for the big sea almond trees that shade it, with a bamboo-covered room at the back and tables on the sand where diners leave their shoes. Before dinner the staff comb their patch of beach smooth and set the tables out on the sand. The menu runs from Massaman curry to roti with green curry chicken, and the bar stocks an unusual run of local and imported craft IPAs and ales.

The Naiyang Cafe is a small, cozy halal cafe a short walk from Phuket International Airport, cooking Thai, Asian and Western food with no alcohol on the menu. Its signature dish is Hokkien noodles, and the kitchen also turns out deep-fried prawn noodles, pineapple curry with prawns and roti with banana and Nutella. Homemade sweets such as mango waffles come with an Oreo shake or a strawberry-kiwi smoothie, and the airport is close enough for a last proper meal on the way to a flight.

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked. Rankings are never sold. Full method.
