One Chun is a Southern Thai restaurant run by Napapat "Prang" Chessadawan, who cooks from recipes handed down through three generations from her grandmother. Its 19th-century building is hung with old clocks, transistor radios and black-and-white televisions, collected out of her love of art and antiques. The Michelin Guide gives it a Bib Gourmand and singles out gung makham, deep-fried prawns in tamarind sauce served in a pineapple.

Raya is a family restaurant opened in 1994 by Kularb Jesadawal, known as Madam Rose, who left a job at a bank after her friends and family urged her to cook for the public. Its yellow crab curry, thick with fresh crab meat, coconut milk and turmeric, comes with thin rice noodles and is the dish it is known for. The moo hong, pork cooked with pepper and garlic, takes more than three hours, and Raya held a Michelin Bib Gourmand for six years.

Tu Kab Khao is a southern Thai restaurant in a century-old Sino-Portuguese house on Phang Nga Road in Old Phuket Town, easy to spot by the lobster sculpture on its corner. The menu is Phuket home cooking based on the owner's mother's recipes, with crab curry on rice noodles as the best-known dish. It is listed in the Michelin Guide Thailand with a Bib Gourmand, has live music in the evening, and often has a wait at busy times.
“Located in a grand Sino-Portuguese shophouse on Phang Nga Road, Tu Kab Khao is famous for its striking giant lobster decoration on the building's exterior”

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked. Rankings are never sold. Full method.
