The Smokaccia Laboratory is chef Luca Mascolo's tasting menu restaurant, built around a sourdough fermented for 50 hours that opens the meal as the course called How It All Began. The eighteen courses, with full vegetarian and vegan versions, lean on fermentation and infusion, and the kitchen works toward zero waste, even turning lunch scraps into dessert. Sommelier Massimo Zoz runs a wine pairing and an alcohol free one, and the restaurant was the first in Thailand to earn Five Radishes from the We're Smart Green Guide.

Wagyu Steakhouse is the Twinpalms steak restaurant, spread over two floors with an interior by Nao Taniyama, who has designed Michelin starred steakhouses, and a vertical garden by Martin Palleros. Diners pick their cut from the beef display, including Darling Downs Wagyu graded 3 to 8, and Chef Nok's kitchen dry ages it and grills it over charcoal in a Josper oven. Each steak comes with a choice of five knives, from Laguiole and Opinel to KAI Wasabi, and the Michelin Guide lists the restaurant.

Beach Restaurant is The Surin Phuket's dining room on Pansea Beach, with tables set out on the lawn right beside the sand. Its Thai degustation menu is served as the sun goes down, and the kitchen works with locally sourced ingredients, from the à la carte menu to beach barbecues and Thai buffets on the sand. Diners from outside the hotel are met by a transfer and driven down to the restaurant, then taken back after dinner.
