Casa Boho is a Latin American restaurant and bar at the Hyatt Regency, cooking from menus by native Latin American chefs, with ceviche made fresh each day beside the tapas and tacos. The building climbs three levels in a bohemian style to a roof terrace over Kamala Bay, and below it the tables sit around an infinity pool that anyone dining can swim in. DJs and singers work the pool deck, playing Afro-Latino beats, nu disco and Latin and organic house.

Rock Salt is the beach restaurant of The Nai Harn resort, built out on a rocky outcrop with an open terrace under a light canopy, closer to the water than anything else on the bay. The blackboard menu follows what Rawai's sea gypsy fishermen bring in on their day boats, cooked by a chef who came from Michelin-starred kitchens in London and Bangkok. Port Phillip mussels come two ways, marinière or in yellow curry, and the rosés on the wine list are chosen to go with the seafood.

Kin Dee's cooks make southern dishes that are hard to find anywhere else on the island, among them a fiery shrimp nam phrik of Phuket prawns, lime and shallots, eaten with sea grapes and young cashew leaves. Owner Ton runs the restaurant with a former five-star hotel chef and her sisters at the stoves, cooking with produce from nearby farms and their own garden, as they have for more than 20 years. Tables sit on a wooden terrace under the trees, looking down on a stream and the Mai Khao mangroves, with orchids and baskets of plants hanging all around.
“The crab fried rice was packed with flavour and generously topped with fresh crab meat, while the black ink fried rice was rich, aromatic, and beautifully executed.”

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked. Rankings are never sold. Full method.
