Wu Lin takes its name from the martial world of Chinese kung fu novels, and the whole restaurant plays along, greeting diners as masters and naming its buffet sets after warriors, up to the wagyu Conqueror of Heaven. Every diner cooks in a separate pot, filled from nine broths with numbing Sichuan mala among them, and the two top sets include unlimited giant river prawns. The fried lava buns, crisp shells that break open onto a molten salted egg yolk, are the dish Wu Lin is best known for, and in Room 18 a party of eighteen can sit down together around one great pot.

Shabu Shabu by Phuketboi puts its broth first, and a chef with more than 40 years of experience makes the soups and dipping sauces in house. Graffiti covers the walls with a touch of Japan, and a meal here runs as long as the table likes, so friends and families linger over their pots. Marinated prawns and marinated salmon are part of the unlimited spread, and the premium set adds a house platter of top beef cuts, with New Zealand crying tiger among them.

Shabu San cooks Japanese shabu shabu and sukiyaki with an eye on authentic flavor, in a large, airy room where the tables are set well apart. The dark broth here is rich and concentrated, and the house dipping sauce is a standout. On the upper tier, the two hour buffet includes Kurobuta pork and river prawns.

Shabu Lion pairs premium shabu with a Japanese buffet, and each table chooses up to three broths for its pot, then orders by number from a picture menu. Australian wagyu is sliced fresh daily, and the sashimi comes in generous, very fresh cuts. The sauce bar has seven dipping sauces, including a fragrant, bright ponzu, and dessert can be a pancake made to your own taste.
