Sam's has cooked steaks inside the Holiday Inn Resort in Patong since 1990, and the kitchen dry-ages its beef in house, up to an A5 full-blood Wagyu ribeye. Oysters are imported from France, and dinner is silver service, with an amuse-bouche to open and a sorbet between courses. Dessert can be a rum baba flambé, and the room cannot be seen from the street, so walk into the hotel to find it.

A meal at Best Thai Beef starts at the glass fridge by the door, where the chef talks you through the dry-aged cuts, each with its marbling score. The beef is mostly Thai Wagyu from the northeast, a cross of Japanese and Australian wagyu, aged for weeks and cooked on an open charcoal grill. The same beef goes into the burger, and the menu also has a spaghetti with local crab.

La Cantina in Rawai sears its steaks over an open flame, with the grill in view of the tables so you can watch the cook at work. A wood-fired oven turns out the pizzas. The carbonara is made the Italian way, with egg and no cream.

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked. Rankings are never sold. Full method.
