One Chun cooks Southern Thai recipes handed down in the family, in a 19th century Old Town building that the owner, who came from fashion design, has fitted out in vintage tones. The crab meat in yellow curry with noodles comes thick with crab, and the Phuket-style braised pork belly, mu hong, is another house specialty. It holds a Michelin Bib Gourmand, the guide's mark for good cooking at moderate prices.

Raya is a family restaurant opened in 1994 by Kularb Jesadawal, known as Madam Rose, who left a job at a bank after her friends and family urged her to cook for the public. Its yellow crab curry, thick with fresh crab meat, coconut milk and turmeric, comes with thin rice noodles and is the dish it is known for. The moo hong, pork cooked with pepper and garlic, takes more than three hours, and Raya held a Michelin Bib Gourmand for six years.

Blue Elephant occupies Phra Pitak Chinpracha, a restored Sino-Portuguese mansion from the early 1900s that was once a governor's residence, set in its own grounds in Phuket Town. The kitchen cooks Southern Thai and heritage Phuketian recipes, from a fragrant tom yum to a tamarind foie gras first created 25 years ago. Its cooking school starts with a guided walk through a fresh market, then students cook four Thai dishes and eat them in the restaurant.

How the points work
We read every independent published best-of list we can find for the question. Each list gives 10 points for first place, 9 for second, down to 1 for tenth, and 5 points to each place on a list with no order. Points are added up. A business must be in the top 10 of at least two lists to be ranked. Rankings are never sold. Full method.
